Introduction

Jackfruit Seed Cookies that make from jackfruit seed flour and Ice blended jackfruit that make from jackfruit seed. The seeds (nut) which is similar to chestnuts. The seeds would give you around 135 kcal/ 100 gms. It is a rich source of complex carbohydrate, dietary fiber, vitamins like vitamin A, C and certain B vitamins, and minerals like calcium, zinc, and phosphorous. They contain lignans, isoflavones, saponins, that are called phytonutrients and their health benefits are wide-ranging from anti-cancer to antihypertensive, anti-ageing, antioxidant, anti-ulcer, etc. Jackfruit seed powder has the ability to relieve discomfort due to indigestion. Boiled Jackfruit seeds are a very tasty and nutritious snack. Boiled Jackfruit seeds can be used as an alternative to potatoes.


Healthy benefits if eat jackfruit


An excellent energy food with only a small amount of fat.May help prevent and treat tension and nervousness.Helps in obesity.Helps prevent constipation.It is also known to help cure ulcers and indigestion.Helps to lower blood pressure because of its high potassium content.Jackfruit is rich in phytonutrients that can fight cancer and slow down degeneration of cells that can lead to degenerative diseases.Jackfruit is a good source of VitaminC.The human body does not make vitamin C naturally so we must eat foods that contain it.The jackfruit root is a remedy for skin diseases and asthma. An extract of the root is taken in cases of fever and diarrhea.
Jackfruit provides a good supply of proteins, carbohydrates and vitamins.


Objectives


The main objective in making cookies and ice banded from jackfruit seed is ito expose the use of jackfruit seed. Many people do not know the advantages and nutrition are hidden in jackfruit seeds that are interested in food in India. We would like to introduce nutrition and the benefits that seed jackfruit jackfruit seeds can be used as well as jackfruit seeds also have nutritional hidden.

Activity

Firstly, we had a discussion between our group members. We discussed about how to expand our ideas for our main product. Each and every time before we started our kitchen class, everybody in our group will gave out an idea on how to improvise our seed jackfruit cookies become more excellent.

In our class we will use the same method and ingredients to make the cookies. Besides that, we will improvise and observe on the time to make the cookies, the taste and the texture of the final product at the end of the class. From this observation, we will come out with new methods on how to improvise the technique for the next class.


BEFORE THE EVENT

At 2nd April we made a seed jackfruit powder. It takes a day to make the powder. A week before the event on 9th April, we made the cookies and we planned on store it in the container. He had made an experiment either the cookies can be still eaten after a week. We afraid if it won’t last, this will cause us problems on the event day itself.



DURING THE EVENT DAY

On Wednesday, 14th April 2010 is the most important day for all the students who involved in Food Innovation & Design. This event took place in Student Lounge at UNITAR Kelana Jaya. This is the day that all of us have been waiting for. This day also is the day where our product will be judged by 3 most important person; Maria Tunku Sabri, Chef Adzhar Md. Zin and Mr. William Quah.

We have started our day at the kitchen at 8.00 a.m. All the preparation for the cookies and booth decoration had to be done before 10.00 a.m because the judges and V.I.Ps will be arriving at that time. Only 2 members of the group, Taufiq and Zira responsible at the booth for presenting the product to the judges. The other 1 member, Rafiq was assigned to take in charge for the kitchen and food preparation.

AFTER THE EVENT DAY

After the event finished, all students headed back to kitchen to clean up our own station. The lecturer gives a post mortem to all student to make sure any problem that we have. For the winner group, they share their prizes with group members. For other groups, we took pictures and share thoughts and opinion of what had happened during the event. As our group, we were satisfied of what we had pulled and gave out for the events.



PROBLEM FECED
We having a problem when the event start. Ice blanded is the big problem. awe need to blend it a minutes berofe the jugde or guest tried it. The problem is we need to use a blender and we need a ice. Firstly Mis Nina siad that we need to bled it on the ketchen but it maybe take a long time if someone run from the kitchen to the hall. We decide to blend it on the hall. We bring all the equipment and all the ingredients to the hall. Luckly the hall is nise so if we are using the blender it not any problem with the sound. For the cookies we just need to mantain the texture. We want the cookies still crunh. So we decide that we will put our cookies went the event already start and went the judge near to our place. We also using a container that can protect the cookies from air.
RECOMANDATION
The seed jackfuit (cempedek) is more tasty than the seed jackfruit(nangka) because the 'cempedak' have a own taste that can make the cookies more tasty. Refer to interview, reasech, and experiment it thru that if we are using the 'cempedak' the cookies become more flavored. the ice blanded also same.
CONCLUSION
The conclusion that we get through this assingment is how interesting to do something new. How iportant a team work. Why i say so? It because when doing cookies we have to pill up the seed. That is the dificult task to do and it take a long time to finish it up. This subject had give a student to know how to inovate a food to become more tasty then before so it can be market to public. This project also can help we as a student to develop our skill in this industry.

9th May 2010 PREPARATION FOR i FOOD INNOVATION EVENT

Today time to preparation for the events.Last experiments we do to give food taster for 200 guest. we make two products cookies and beverages..first product we make JACKFRUIT SEED COOKIES and second product beverages we make the time of events.the recipe we add for big portion because to serve for 200 guest.So u can see what we do=)
the ingredient for our cookies
INGREDIENT:
butter 800gm
sugar 800gm
flour 1150gm
egg yolk 10nos
essen vanilla 5tbsp
baking powder 5tbsp
chocolate chip 50gm
seed jackfruit 75gm
walnut 50gm




Beat butter, sugar and vanilla essence until light and creamy.


Add in egg yolks one at a time beating well after addition.


Then,add the walnut and jackfruit seed flour


Then,add flour and Keep stirring until it is well mixed.






for now the cookies is already to be baked after the dough have been smoothly done.



lastly after the cookies been baked around 40 minutes it already to present.
and we Our store in airtight container plastic to maintain the quality of food product.


26th MARCH 2010 TIME FOR MAKE SEED JACKFRUIT FLOUR

For 26th March,we do seed jackfruit flour to make preparation for the exhibition...because proses to make flour very complicated and takes to long time..so you can see what we do..

19th March 2010 CLASS TO IMPROVE THE QUALITY OF PRODUCT

For the 19th March we are back with our latest report. for this week we are just improvise the taste and quality of our food that we made last week. we would like to show what we have done during this whole day. Alhamdulillah we products well be done. the taste and the quality of the products well be done for overall we do the experiments. just want to improve the quality of the cookies.so you can see the result we do..=)

butter 160gm
sugar 160gm
flour 230gm
egg yolk 2nos
essen vanilla 1tbsp
baking powder 1tbsp
chocolate chip 10gm
seed jackfruit 15gm
walnut 10gm


first process to do seed flour..slice the seed jackfruit

after baked blend the seed

sixth week (3rd week experiment of the project)


For this sixth week of class and the 3rd time of our project (JACK FRUIT SEED COOKIES ) been done. In this week of class we been given a task to improvise our product so that we could prepare of the exhibition just around the conner. For now we would like to present the step ourfood innovation product been done.

INGREDIENT:
butter 160gm
sugar 160gm
flour 230gm
egg yolk 2nos
essen vanilla 1tbsp
baking powder 1tbsp
chocolate chip 10gm
seed jackfruit 15gm
walnut 10gm

the seed's been boiled for a while



after the seed been boiled rafiq n taufiq peel out the skin of that seed.


next, the seed are ready to be blend.



after the seed blended, for now the seed needs to been baked for a while.



after the seed been baked we mix all the other ingredient.


for now the cookies is already to be baked after the dough have been smoothly done.



lastly after the cookies been baked around 1/2 and hour it already to present.

later on we are on the next task which we need to make our beverage with our main product (Jack fruit SEED)

firstly we blend the seed with the beverage recipe the we agreed.

fifth week ( 2nd week experiment of the project)

For this fifth week of class and the 2nd time of our project (JACK FRUIT SEED COOKIES ) been done. In this week of class we divided our cookies into different type of combination of ingredient, different types of method and add with extra flour. Now we would like to show you the steps of our project been done.

1/4 of the dough has been baked in a method of drop cookies


the cookies also been divided to 4 types
1. The dough and the walnut
2. The dough mix with walnut and extra of flour
3. The dough just been mixed with hazelnut
4. Lastly the dough mix with hazelnut and extra flour


Beside we baked the Jack Fruit Seed Cookies, we also make a lovely beverage which is also been made from the Jack Fruit Seed. This is the example picture or proof that we made the beverage.
